- Mix 120g of butter with 75g of dark brown sugar and 75g of caster sugar. Try molasses instead of the brown sugar if you can get your hands on some. The mixture should be a consistent texture and colour by the time you're finished.
- Add one egg to the mixture and beat hard and fast with a whisk.
- Add a pinch of bicarbonate of soda and a pinch of salt.
- Seive 150g of plain flour over the mixture and mix with a wooden spoon.
- Add 150g of chocolate chips or grate a couple of chocolate bars of your choice.
- Scoop out balls of the mixture onto a lined baking tin. The very last bits of the mixture will be on your fingers.
- Bake for about 10 minutes at about 160°C / gas mark 4.
- Eat them while they're still warm and gooey.
